Today I took a dessert class with Sarah in Sur La Table. There was so much sugar, chocolate, nuts, etc. So for dinner I wanted something quick and relatively healthy. Unfortunately, it was raining and I had to use only the things I had in my fridge.
Here's what I did: saute green beans in oil, add sliced garlic, cook for a few minutes. Add sliced roasted peppers, kalamata olives and fresh basil. Season with salt and pepper. Once everything is cooked to your desired doneness, add feta cheese and toasted pine-nuts. Awesome!
