Garlic Scape Pesto

Over the last few weeks, I've heard quite a bit about garlic scape. I finally saw and bought garlic scape at the Dupont Farmers' Market on Sunday and today made garlic scape pesto.

Ingredients
1 cup cut up garlic scape
1/3 cup Parmesan cheese
1/3 cup walnuts, toasted (you can also use pine nuts or hazel nuts)
3/4 cup olive oil
salt & pepper to taste

Directions
1) In a food processor combine garlic scape, Parmesan and walnuts.

2) Slowly pour olive oil into the processed garlic scape, Parmesan and walnuts, while pureeing the entire mixture. The pesto should not be smooth.

3) Season with salt & pepper to taste. Keep in mind that Parmesan cheese is quite salty on its own.
