I thought I'd share my lunch with y'all:
brown rice (I first cooked it in a bit of oil before adding the water) and beans (the way Laura taught me: a drained can of kidney beans, two cans of water, and some sofrito; let everything bubble until most of the water is no longer visible and the beans are plump).
To that I added some of the pulled pork from the sandwich I bought on Tuesday...but something was missing: there was no sauce!
I decided to add some of the honey/ginger/garlic/soy sauce marinade I used to make mahi mahi last night, and the combination was spectacular!

Olguita, you forgot to add half a can of tomato sauce to the beans....happy to hear they turned out good anyways!
