This "recipe" is ridiculously quick, easy to make and tasty! Give it a try.
1. Put a piece of tilapia on a large piece of parchment paper. Lightly salt and pepper.
2. Cover tilapia with garlic scape pesto.
3. Add a few slices of thin yellow squash and red onion.
4. Fold the parchment into a pocket.

5. Microwave for 2 minutes, carefully open the parchment paper and enjoy!!!

This is an old method of cooking fish. In French they call it "en papillote." Try blanching some leeks, and putting them under the fish before cooking it. When I do this at my restaurant, I brush the paper with either an egg wash or butter (so the paper will brown), and I present it in the paper. The server cuts the pouch open tableside, so that the vapours can be savoured by the diner. Just thought you might want to know. :-)
